Easy Gluten Free Tofu Noodles

Ingredients
- 14 ounces extra firm tofu
- 16 ounces fresh asparagus
- 3⁄4 cup dried apricot
- 12 ounces brown rice pasta
- 5 garlic cloves
- 2 tablespoons olive oil
- 2 tablespoons butter
- salt
Directions
- Press and drain tofu.
- Add oil and minced garlic to a large frying pan.
- Cut tofu into small squares and saute until brown.
- Snap asparagus and add to pan.
- Dice apricots.
- When asparagus is almost cooked , add apricots .
- Mix with cooked pasta and butter.
- Salt to taste and serve immediately.
