Easy Flatbread

I saw these made on a cooking channel and it looked so easy I tried them for company. I served the flatbread with spreadable cheese like Boursin and topped with a Cranapple compote. They are all different shapes so are not only rustic looking, they taste great. Show more

Directions

  1. Place flour in a bowl with olive oil and using your fingers combine to make crumbly.
  2. Add grated onion, salt and 2 Tbsp water, mixing with fingers to combine, adding an extra sprinkle of water at a time if required.
  3. Knead mixture to form dough.
  4. Break off small pieces (about 1-1/2 inch) and using a rolling pin flatten to about 1/8 inch.
  5. Place pieces on well oiled cookie sheet, brushing the tops lightly with more olive oil, then sprinkle with sea salt and rosemary or thyme.
  6. Bake at 350 degrees for 10-15 minutes until nicely browned.
