Easy Fiesta Tostadas

A quick-to-fix Tex-Mex dish.

Ingredients

  • 16  ounces  refried beans
  • 16  ounces salsa, divided use
  • 12 cup diced tomato
  • 1  cup  shredded cheddar cheese, divided
  • 12  tostadas, warmed
  • 1 13 cups  guacamole
  • 34 cup  shredded lettuce
  • 14 cup  sliced black olives
  • 14 cup sour cream

Directions

  1. In med. bowl, combine beans, 1/2c. salsa, tomatoes, and 1/2c. cheese; mix well.
  2. In non-stick saute pan, heat thoroughly till cheese is melted. Spread equal portions of bean mixture over 4 tostada shells; place a tostada shell on top of each.
  3. Spread equal portions of guacamole over each tostada; top with a third tostada.
  4. Garnish top with remaining salsa, cheese, lettuce and olives. Place 1 tbsp sour cream in center of each.
