Easy Enchiladas

Yields: 6 Enchiladas
Ingredients
- 19 ounces red enchilada sauce
- 1 1⁄2 cups cooked shredded beef (optional) or 1 1⁄2 cups chicken (optional)
- 8 -16 ounces shredded mozzarella cheese
- 6 flour tortillas or 6 corn tortillas
Directions
- Spray 9 x 13 baking dish with cooking spray.
- Add enough enchilada sauce to coat bottom.
- Wet tortillas with a little water.
- Add meat and/or cheese.
- Microwave 20 secs. for flour tortillas, 30 secs. for corn tortillas.
- Roll and place seam side down in 9 x 13 baking dish.
- Add the rest of the enchilada sauce.
- Sprinkle cheese on top.
- Bake at 400 degrees for 15 minute.
