Easy Enchiladas

Yields: 12 enchiladas
Ingredients
- 1 tablespoon oil
- 1 onion, chopped
- 1 lb ground beef
- 10 3⁄4 ounces condensed tomato soup
- 10 ounces enchilada sauce
- 8 medium flour tortillas
- 2 cups cheddar cheese, shredded
Directions
- Heat oil in a large pan and add onions. Cook until soft.
- Add ground beef and cook over medium heat until meat is browned, stirring until meat crumbles; drain and return to skillet.
- Stir in tomato soup and enchilada sauce. Mix well and bring to a simmer.
- Spread about 1/4 cup meat mixture on each tortilla; sprinkle tortillas evenly with 1 cup cheese. Roll up, and place, seam side down, in a 9x13-inch baking dish. Pour remaining meat mixture over tortillas.
- Cover and bake at 350 degrees for 20 minutes.
- Uncover and sprinkle with remaining cheese. Bake an additional 5 minutes or until cheese melts.
