Easy Eggnog

This is a delicious eggnog recipe I cut out of the Vancouver Sun in 1987, and I've made it nearly every Christmas since. It is egg-free, yet creamy and rich.

Ingredients

• 1 (92 g) package  jello vanilla pudding mix (not instant)
• 4  cups  light cream, divided
• 1⁄2 teaspoon vanilla
• 1  cup  orange liqueur or 1  cup brandy
• 1  cup  whipping cream (whipped, don't whip till just before serving)

Directions

1. Prepare pudding according to directions, substituting light cream for 2 cups required milk.
2. When cooked remove from heat, whisk in remaining light cream, vanilla and liqueur.
3. Chill till very cold.
4. Fold in whipped cream just before serving.
5. Serves 12- 6oz cups.
