Easy Creamy Tomato Soup

Ingredients
- 1 (28 ounce) can whole canned tomatoes
- 3 garlic cloves
- 1 1⁄2 cups chicken stock or 1 1⁄2 cups vegitable stock or 1 1⁄2 cups water
- 1⁄4 teaspoon cayenne pepper (to taste)
- 4 teaspoons dried basil, divided
- 2 teaspoons butter
- 1 cup of finely chopped onion
- 1⁄2 teaspoon paprika or 1⁄2 teaspoon smoked paprika
- 1⁄2 cup milk or 1⁄2 cup cream
- 1 teaspoon salt (to taste)
- 1 teaspoon pepper (to taste)
- 1 tablespoon sugar (to taste) or 1 tablespoon Splenda sugar substitute (to taste)
Directions
- Place tomatoes, garlic, stock, cayenne pepper, 2 teaspoons of basil into blender.
- Blend on soup setting or 7 minutes on high speed until hot.
- In the meantime, in a pot, saute the onions and paprika in the butter until onions are golden.
- Pour the tomato mixture into the pot.
- Add cream/milk, 2 teaspoons of basil, salt and pepper and sugar and cook on low stirring occasionally for 10 minutes. Bon appetit!
