Easy Cornbeef Hash

This is a recipe I came up with after eating the canned cornbeef hash. You will need a food processor for this dish. It is also good with leftover pork roast and ham, not so good with beef. The method is to have a ratio of one portion of meat to two portions of potatoes. Another thing is to pulse the mixture or it will come out to pasty. My DH really loves to have this for breakfast. Serves: 2-4

Ingredients

  • 1  cup corned beef, roughly chopped
  • 2  cups potatoes, roughly chopped
  • 1  onion, roughly chopped
  •  salt and pepper, to taste

Directions

  1. Depending on the size of your food processor, layer the cornbeef, potatoes and onions and PULSE the mixture until it is finely diced, about double the size of cooked rice. Be sure not to over process. Heat your saute pan to medium high and fry until potatoes are done and it is lightly browned. Serve with fried eggs on top, if desired.
