Easy Corn Salsa

Ummmmm, Yummy, Yummy!!! I got this recipe from my BFF neighbor at her 50th Birthday party. It was sooooo good I had to move the bowl away from where I was sitting so I wouldn't eat it all! It is really easy to make and most ingredients are in your pantry right now. It is cool, crisp and delicious! Enjoy!!! Show more

Serves: 6

Ingredients

  • 1 (15 ounce) can  sweet corn (drained)
  • 1 (15 ounce) can black beans (drained, rinsed)
  • 1 (10 ounce) can rotel (I prefer "hot", but original recipe calls for "mild")
  • 1  small red onion, diced
  • 14-12 cup cilantro, finely chopped
  • 1  garlic clove, finely chopped
  •  salt and pepper

Directions

  1. Combine all ingredients in a medium bowl. Mix well and chill for at least 1 hour before serving. Serve with Tortilla chips or Pita chips. Refrigerate left overs for up to 3 days.
