Easy Corn Pudding (No Milk)

I wanted to make corn pudding, but I ran out of milk. This is based off a dairy-free recipe. If you melt the butter in the casserole dish, you don't need to grease it. Serves: 2-4

Yields: 1 2 quart casserole

Ingredients

  • 1 (8 1/2ounce) package  corn muffin mix (I use Jiffy)
  • 2 (14 3/4ounce) cans  sweet corn, drained
  • 2  eggs
  • 12 cup butter, melted
  •  salt and pepper

Directions

  1. Preheat oven to 350.
  2. Mix all ingredients in 2 quart casserole.
  3. Bake for 45 minutes Serve Warm.
