Easy Cheese Soup

Ingredients
- 3 cups diced potatoes
- 2 cups water
- 1⁄2 cup sliced celery
- 1⁄2 cup sliced carrot
- 1⁄2 cup chopped onion
- 1 teaspoon parsley
- 1 chicken bouillon cube
- 1⁄2 teaspoon salt
- 1 dash black pepper
- 1 1⁄2 cups milk
- 2 tablespoons flour
- 1⁄2 lb Velveeta cheese, cubed
Directions
- In a large pot combine the first 9 ingredients.
- Cover, and simmer for 20 minutes.
- Gradually add flour to milk.
- Mix well.
- Add to vegetables.
- Cook until thickened.
- Add cheese, and stir until melted.
- Serve on a wintery day!
