Easy Beef and Veggie Bolognese

This is just plain old bolognese, with some shredded veggies added for nutrition. I usually use this method to "doctor" a commercial sauce, such as Ragu or Five Brothers. Show more

Serves: 6

Ingredients

  • 1 (750 g) jar  pasta sauce (make sure it's a nice thick one, or make your own)
  • 2  teaspoons olive oil
  • 3  garlic cloves
  • 1  onion
  • 2  medium zucchini, grated
  • 2  medium carrots, grated
  •  additional chopped  vegetables, such as mushrooms, capsicum, celery, if wanted
  • 500  g lean ground beef

Directions

  1. Brown the beef, drain fat, and set aside.
  2. Saute onion, celery (if using) and garlic in a little oil till onion softens.
  3. Add carrots, zucchini, and other veggies. Saute for 3 - 5 minutes.
  4. Return beef to pan with veggies.
  5. Add pasta sauce. If you are using a plain sauce (like a passata), then season with salt, pepper, basil, and oregano. If you are using a commercial sauce that already has flavourings added, you should be able to get by without it.
  6. Simmer for 30 minutes, or more if you have the time. Or less if you don't!
  7. Serve over hot cooked pasta.
