Easy Barley Chili

Ingredients
- 1 -2 tablespoon olive oil
- 1 small chopped onion
- 2 teaspoons minced garlic
- 2 -3 chopped carrots
- 1 -2 cup chopped cabbage
- 3 -4 cups fresh spinach
- 1⁄2 cup barley
- 1 (15 ounce) can chicken broth
- 1 (15 ounce) can diced tomatoes
- 1 -2 teaspoon oregano
- 1 -2 teaspoon cumin
- 1 -2 teaspoon chives
Directions
- Saute onion, garlic, and carrots in oil with seasonings in large soup pot. Add cabbage. When vegetables are slightly softened, add diced tomatoes, broth, barley, and tomato sauce. Add fresh spinach. Bring to a boil and simmer until barley is done (about 40 min).
