Easy Baked Chicken Fajitas

My daughter, Melinda, gave me this recipe. Not as much mess as the usual Fajitas and much lighter. Easy to make for dinner after work and easy to clean up as well - and who doesn't like that idea! I use the Rotel fire roasted tomatoes with green chilies - just gives it a little more flavor. Lately, I have been making this into a rice bowl...omitting the tortillas. Show more

Yields: 8 Fajitas

Directions

  1. Preheat oven to 400 degrees.
  2. Combine ingredients, except tortillas, in a 9 X 13 pan.
  3. Bake for 25 minutes.
  4. Spoon into tortillas.
  5. Top with Salsa, Sour Cream, Cheese.
