Easy Apricot Squash Soup

Very simple and quick to put together, this is a nice, thick soup with warming wintry flavor, though of course it can be enjoyed year round. Show more

Ingredients

  • 2  cups  butternut squash, cooked and pureed (it's pre-packaged and frozen at the grocery store)
  • 1  cup  apricot nectar
  • 1  tablespoon half-and-half
  • 14 teaspoon cinnamon
  • 18 teaspoon nutmeg
  • 18 teaspoon ginger
  •  pepper

  1. blend everything and simmer until warm or begins bubbling.
  2. enjoy!
