Earthquake Cake

When I first found this recipe I was intrigued by the name. It's become a family favorite.

Serves: 12

Ingredients

  • 1  cup  chopped  nuts
  • 1  cup coconut
  • 1 (18 ounce) package  German chocolate cake mix
  • 1 14 cups water (or as called for by the directions)
  • 3  eggs (or as called for by the directions)
  • 12 cup  oil (or as called for by the directions)
  • 12 cup margarine (not spread or tub product)
  • 8  ounces cream cheese, softened
  • 3 12 cups powdered sugar

Directions

  1. Grease 9x13 cake pan and preheat oven to 350°F.
  2. Cover bottom of pan with nuts and coconut.
  3. Mix cake as directed on package.
  4. Pour cake batter over nuts and coconut.
  5. Mix margarine and cream cheese until smooth.
  6. Add powdered sugar and mix well.
  7. Spoon over the cake batter.
  8. Bake 1 hour.
  9. Cool completely.
  10. Turn upside down on plates.
