Dutch Babies

This is a family recipe that my mom made every New Year's and Easter when I was growing up. We always served it with a big bowl of lemon wedges and powdered sugar on the table. I make it for my family now and it is definitely one of my all-time favorite meals. Enjoy! Show more

  1. Preheat oven to 425 degrees f.
  2. Melt butter in baking dish (pretty much any size corningware or pyrex within reason)in the oven. Once it is melted, remove from oven.
  3. Meanwhile, beat 3 eggs until light yellow.
  4. Mix the flour and the milk into the eggs until combined.
  5. Pour mixture into the dish of melted butter and sprinkle with a pinch of nutmeg.
  6. Bake for 20- 25 minutes. The whole thing will puff up and brown around the edges and should fall in the center once it is removed from the oven.
  7. Top VERY generously with powdered sugar (my husband prefers to use granulated sugar which gives it an odd grainy texture in my opinion if the sugar doesn't completely dissolve) and loads of fresh squeezed lemon juice. Enjoy!
