Dumpling Vegetable Soup

Serves: 4-6
Ingredients
- 8 cups chicken broth (I used Jameson bouillon)
- 12 ounces frozen flat dumplings (or frozen noodles)
- 3 carrots, cut into 1 inch chunks
- 15 ounces mixed vegetables, drained
- 1 -2 cup frozen mixed vegetables
- 1 -2 cup frozen chopped spinach
- 15 ounces light kidney beans, drained & rinsed (white beans could work too)
- poultry seasoning
- salt & pepper
Directions
- Bring broth to a boil. Add remaining ingredients. Simmer for at least 35 minutes. Adjust ingredient amounts to your preferences.
