Dumpling Vegetable Soup

I was hungry for a hearty, warm soup & just started throwing staples together & came up with a tasty little soup! It's quick & easy! Show more

Serves: 4-6

Ingredients

  • 8  cups chicken broth (I used Jameson bouillon)
  • 12  ounces  frozen flat  dumplings (or frozen noodles)
  • 3  carrots, cut into 1 inch chunks
  • 15  ounces  mixed vegetables, drained
  • 1 -2  cup  frozen mixed vegetables
  • 1 -2  cup frozen chopped spinach
  • 15  ounces  light kidney beans, drained & rinsed (white beans could work too)
  •  poultry seasoning
  •  salt & pepper

Directions

  1. Bring broth to a boil. Add remaining ingredients. Simmer for at least 35 minutes. Adjust ingredient amounts to your preferences.
