Duck and Apple Loaf

Ingredients
- 1 1⁄2 cups flour
- 1 1⁄2 teaspoons baking powder
- 3 eggs
- 1⁄3 cup olive oil
- 1⁄3 cup milk
- 4 ounces gruyere cheese, grated
- 8 ounces fresh figs, chopped
- 5 ounces smoked duck breast, slices fat removed shredded
- 2 apples, peeled diced
- salt and black pepper, to taste
Directions
- Preheat oven to 350 degrees F.
- Sift together the flour and baking powder. In a bowl, beat the eggs, oil, and milk together. Season with salt and pepper.
- Carefully fold the egg mixture into the flour to make a smooth batter. Add the cheese, figs, duck meat and apples. Stir gently.
- Lightly butter a loaf pan and dust with flour. Pour in the mixture.
- Bake for 50 minutes. Check for doneness by sticking the blade of a knife into the loaf-it should come out dry.
- Cool the loaf before removing from the pan. Cut into small cubes and serve.
