Drunken Hot Garlic Shrimp and Asparagus for One

Springtime and asparagus – add shrimp, garlic, wine, and a good crusty bread – and Wow! This is one of my favorite springtime recipes, but wonderful anytime you can find good asparagus! The recipe will feed one very generously - add a few more shrimp and asparagus to feed two. Show more

Directions

  1. Cut the asparagus on a diagonal into 1-inch pieces and mince the garlic cloves.
  2. Stir the lime juice into the wine and set aside.
  3. Heat the olive oil in a nonstick frypan over medium heat.
  4. Add the asparagus, garlic, salt, red pepper flakes and black pepper to the frypan and cook for two minutes stirring occasionally.
  5. Add the shrimp and cook for three minutes stirring frequently.
  6. Stir in the wine/juice mixture and bring to a boil.
  7. Plate and serve immediately with a good crusty bread.
