Dried Cod Fish Stew

Ingredients
- 1 lb cooked dry cod, shredded
- 1 bunch parsley, finely chopped
- 5 green onions, finely diced
- 1 garlic clove, minced
- 1 tablespoon ketchup
- 1⁄2 teaspoon paprika
- 1⁄2 teaspoon ground cumin
- 1⁄4 teaspoon pepper
- 1 teaspoon portuguese red pepper sauce
- 2 large eggs, slightly beaten
- 2 large potatoes, peeled and diced
- 1⁄2 teaspoon salt
- olive oil
POTATO SLICES
- 8 red potatoes, unpeeled
- 3 whole garlic cloves
- 1 teaspoon chili pepper flakes
Directions
- Saute parsley, onion, garlic and spices in hot oil for several minutes. Add the diced potatoes and cook on medium heat until they are almost tender.
- Add the cooked fish to the mixture, and cook for 5 - 10 minutes, until the mixture is hot.
- Pour beaten eggs over the fish mixture and let cook, then lightly stir.
- Served with potato slices.
- POTATO SLICES; Slice 8 red potatoes into 1/2 inch slices with the peel on. Add the potatoes, 3 whole garlic cloves, 1 tsp chilli pepper flakes, salt and cold water to a pot. Bring to a boil and cook until tender.
- PREPARING DRY COD FISH; Cook for medium heat 20 minutes, then drain. Remove any skin or bones, then shred.
