Dried Cod Fish Stew

  1. Saute parsley, onion, garlic and spices in hot oil for several minutes. Add the diced potatoes and cook on medium heat until they are almost tender.
  2. Add the cooked fish to the mixture, and cook for 5 - 10 minutes, until the mixture is hot.
  3. Pour beaten eggs over the fish mixture and let cook, then lightly stir.
  4. Served with potato slices.
  5. POTATO SLICES; Slice 8 red potatoes into 1/2 inch slices with the peel on. Add the potatoes, 3 whole garlic cloves, 1 tsp chilli pepper flakes, salt and cold water to a pot. Bring to a boil and cook until tender.
  6. PREPARING DRY COD FISH; Cook for medium heat 20 minutes, then drain. Remove any skin or bones, then shred.
