Dressed-Up Meat Loaf (Microwave)

From the Sharp Carousel Micro-Convection Oven Manual and Cookbook. Recipe developed in 700-1050 watt ovens using only the microwave.

Ingredients

• 1 1⁄2 lbs lean ground beef
• 1⁄2 cup  soft breadcrumbs
• 1⁄2 cup red wine
• 1  egg, beaten
• 2  tablespoons onions, chopped
• 2  tablespoons green peppers, chopped
• 1  teaspoon instant beef bouillon
• 1⁄2 teaspoon salt
• 1⁄2 teaspoon dry mustard
• 1⁄4 teaspoon pepper
• 1⁄4 cup ketchup (optional)

Directions

1. Thoroughly blend all ingredients.
2. Press into microwave safe, 9x 5 inch loaf dish.
3. Microwave on HIGH (100%) setting until internal temperature reaches 155° F., 11 to 15 minutes.
4. Let stand 3-5 minutes, covered with aluminum foil. If desired, spread top of meat loaf with 1/4 cup ketchup during last 2 minutes of cooking.
