Dressed-Up Meat Loaf (Microwave)

Ingredients
- 1 1⁄2 lbs lean ground beef
- 1⁄2 cup soft breadcrumbs
- 1⁄2 cup red wine
- 1 egg, beaten
- 2 tablespoons onions, chopped
- 2 tablespoons green peppers, chopped
- 1 teaspoon instant beef bouillon
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon dry mustard
- 1⁄4 teaspoon pepper
- 1⁄4 cup ketchup (optional)
Directions
- Thoroughly blend all ingredients.
- Press into microwave safe, 9x 5 inch loaf dish.
- Microwave on HIGH (100%) setting until internal temperature reaches 155° F., 11 to 15 minutes.
- Let stand 3-5 minutes, covered with aluminum foil. If desired, spread top of meat loaf with 1/4 cup ketchup during last 2 minutes of cooking.
