I like this recipe because one morning I visited the San Diego Arthritis Medical Clinic for a regular visit and my Dr., Dr. Gavrilyuk said to his assistance nurse Judith to call 911 and sent me off in an ambulance because I was actually having a Stroke and Bells palsy at his office, thank God they saved my life, so I promised to make them famous by naming my favorite salad after him Dr. Gavrilyuk Chicken Potato Salad it actually was created by my mother whom was killed by a drunk driver , in Dec of 1981. But I'am so fortunate to have a wonderful Doctor that saved my life and I can now enjoy my happiness with the world and Thank God for Doctors and nurses that care! Show more

Serves: 6-8

Yields: 6 Serves 6-8

Ingredients

  • 6 -8  large  red potatoes, cut in small dice
  • 2  boiled chicken breasts, cut in small dice
  • 14 cup mayonnaise
  • 6 -8  tablespoons  Hidden Valley® Original Ranch® Dressing
  • 6 -8  chives, minced
  • 2  shallots, minced
  • 1  beet, cut in small dice

Directions

  1. Boil the chicken breast in a pot with red onion, salt and Pepper.
  2. Cut in small dice and Put aside.
  3. In a separate pot boil potatoes aldente.
  4. Cut in small dice.
  5. Cook the entire beet by it self until well done.
  6. Peel and clean.
  7. Cut into small dice.
  8. In a large bowl mix all, the red potatoes, the chicken, the mayonnaise, the ranch, the shallots and the beet.
  9. Add salt and fresh white pepper.
  10. Refrigerate for ten minutes.
  11. Now find a beutiful serving dish and carefully pour it in.
  12. Now sprinkle the minced chives on top and serve!
