Double-Quick Mozzarella Chicken

Ingredients
- 4 chicken breasts, boneless, skinless
- 1⁄2 medium lemon (or lime)
- 1 teaspoon ground cumin
- 1⁄4 teaspoon salt
- 3⁄4 cup mozzarella cheese, shredded
- 0.5 (10 ounce) can tomatoes, Mexican-style with green chiles, drained
- 2 tablespoons cilantro, fresh, chopped
Directions
- Preheat oven to 400 degrees F. Spray baking sheet with nonstick cooking spray. Arrange chicken breasts on prepared baking sheet about 2 inches apart. Squeeze lemon juice over chicken. Sprinkle with cumin and salt. Bake 20 minutes.
- Sprinkle cheese evenly over chicken; bake 5 minutes or until chicken is no longer pink in center. Transfer to serving platter.
- Spoon diced tomatoes evenly over each chicken breast. Sprinkle with ciltrano.
