Double Chocolate Macadamia Nut Muffins

Ingredients
- 300 g flour
- 3 teaspoons baking powder
- 1⁄4 teaspoon salt
- 150 g sugar
- 5 tablespoons oil
- 180 ml milk
- 1 egg, beaten
- 70 g white chocolate, chopped
- 70 g dark chocolate, chopped (I used 70% cocoa chocolate)
- 75 g macadamia nuts, chopped (roasted and salted slightly)
Directions
- Combine flour, baking powder, sugar and salt in a big bowl.
- In a second bowl combine egg, oil and milk. Add this to the dry ingredients.
- Fold in chocolate chunks and chopped nuts.
- Spoon batter into prepared muffin tin and bake in the preheated oven at 180°C/350°F for about 25 minutes or muffins are nicely browned on top and a toothpick inserted in the centre comes out clean.
