Double Banana Bread

For mini loaves, bake in 4 mini loaf pans for 40 minutes.

Ingredients

  • 1 12 cups flour
  • 12 cup sugar
  • 2  teaspoons baking powder
  • 12 teaspoon baking soda
  • 12 teaspoon salt
  • 2  eggs, beaten
  • 1 12 cups  mashed ripe bananas (2 to 3 bananas)
  • 14 cup  oil
  • 14 cup water
  • 1 12 cups  post selects  Banana Nut Crunch cereal
  • 1  cup  chopped walnuts (optional)

Directions

  1. Heat oven to 350°F.
  2. Mix flour, sugar, baking powder, baking soda and salt in large bowl.
  3. Beat eggs in small bowl; stir in bananas, oil and water.
  4. Add to flour mixture; stir just until moistened.
  5. Stir in cereal and walnuts.
  6. Pour into greased 9 x 5-inch loaf pan.
  7. Bake 55 to 65 minutes or until toothpick inserted in center comes out clean.
  8. Cool 10 minutes; remove from pan.
  9. Cool completely on wire rack.
