Double Apple Spice Muffins

Yields: 12 muffins
Ingredients
- 4 cups diced apples
- 3 1⁄2 cups whole wheet flour
- 5 teaspoons baking soda
- 2⁄3 cup Splenda granular
- 1⁄2 cup egg whites or 1⁄2 cup Egg Beaters egg substitute
- 2⁄3 cup applesauce
- 1 cup skim milk
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
Directions
- Combine flour, baking soda, and splenda in a large bowl and sift until fluffy.
- Mix milk, applesauce, cinnamon, nutmeg, and milk in a separate bowl.
- Slowly add liquid mix to the dry while constantly stirring. (it will be a thicker batter).
- Start to fold in the apples until even throughout batter.
- Srapy Pam on a muffin pan and spoon the batter to the top of each cup for larger muffins. ( for smaller fill 3/4).
- Bake at 400 degrees for 20 minutes or until tops are golden.
- Let cool and enjoy!
