Doctor's Cake

This cake was called the doctor's cake as it was given to gran by the doctor's wife. A nice cake that is easy and quick.

• Yields: 1 loaf

Ingredients

• 1  cup sugar
• 2  ounces butter
• 1  egg
• 1  cup raisins
• 1 1⁄2 cups self raising flour
• 1  cup milk
• 2  teaspoons mixed spice

Directions

1. Bring to the boil all the ingredients except the flour, mixed spice and egg. Allow to cool. add remaining ingredients and mix well. Transfer mixture to a one pound loaf tin and bake for 1 hour at 160c.
