DIY Ramen Soup

Ingredients
- 4 cups chicken stock
- 1 cup water
- 2 tablespoons miso
- 6 ounces packaged ramen noodles
- 4 shiitake mushrooms, sliced thin
- 2 tablespoons soy sauce
- 2 tablespoons mirin
- 1⁄2 teaspoon garlic powder
- 1⁄4 teaspoon onion powder
- 1⁄4 cup scallion, green & white, sliced
Directions
- In a large saucepan add the chicken stock, water, miso and bring to a boil.
- Add the remaining ingredients and cook for 5 minutes or until the ramen noodles are soft.
- Add the scallions and serve.
