Dixie Pineapple Beans

Ingredients
- 1⁄4 cup light molasses
- 1⁄4 teaspoon ground cinnamon
- 1⁄4 teaspoon ground ginger
- 1⁄8 teaspoon ground nutmeg
- 1⁄2 teaspoon salt
- 2 (16 ounce) cans vegetarian beans
- 1 (8 ounce) can pineapple chunks
- 2 tablespoons pineapple juice
- 1⁄2 teaspoon lemon juice
- 1⁄2 cup pecans, chopped
- 1 tablespoon light molasses
- 1 tablespoon butter, melted
Directions
- Combine 1/4 cup molasses, cinnamon, ginger, nutmeg and salt in a 1 1/2 quart casserole. Add beans, pineapple, pineapple juice, lemon juice and 1/4 cup of the pecans. Mix well. In cup, combine remaining pecans, 1 tablespoons molasses and butter). Spoon around edge of beans (optional). Bake at 350 degrees for 40-45 minutes or until beans are bubbly.
