Dixie Crossroads Corn Fritters

Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 4 tablespoons white sugar
- 2 large eggs (beaten)
- 1 cup milk
- 4 tablespoons melted butter
- 1 cup whole corn, from a tin (drained)
- icing sugar, as needed
Directions
- In a large pot or deep fryer, heat your preferred oil to deep fry with to approximately 350 degrees F.
- In a mixing bowl, sift together the flour, baking powder, salt, and sugar.
- In a separate bowl, combine beaten eggs, milk, and butter.
- Whisk egg mixture into dry ingredients; stir in corn last.
- Drop by tablespoonfuls into hot oil; deep fry about 5 minutes, or until fritters are golden brown.
- Sprinkle with icing sugar and serve as soon as possible; best when served very warm.
