Dirty Rice, Saturday Morning Special

Ingredients
- 1 1⁄2 cups long grain rice
- 3 cups water
- 1 tablespoon butter
- 1 chicken bouillon cube
- 1 teaspoon salt
- 1 lb mild sausage
- 1 small onion
- 1 red bell pepper
- 1 stalk celery
Directions
- Place 3 Cups of water and 1 t salt in a 5 quart pot. Bring water to a boil and add 1 chicken bullion cube and one T of butter.
- Add 1 1/2 C long grain rice. Bring water back to a boil, stirring constantly. Turn heat down to a simmer and cover with lid. Cook 15 minutes. Let stand 10 minutes until all of the water has been absorbed.
- Chop onion, red pepper and celery. Set aside.
- In another skillet, brown sausage and add chopped vegetables to sausage. Brown over medium heat for 5-10 minutes.
- Drain sausage/vegetable mixture WELL,.
- Combine the rice with the sausage mixture and stir, heating the mixture thoroughly.
- Add salt and pepper to taste.
- * If you like the dirty rice spicier, you can add a few drops of your favorite hot sauce to taste.
- ** In summer, you can add one or more medium tomatoes, chopped.
