Dijon Roasted Potatoes

Ingredients
- 6 -8 medium red potatoes, unpeeled
- 2 tablespoons Dijon mustard
- 4 tablespoons olive oil
- 1 garlic clove, minced
- 1⁄2 teaspoon thyme
- 1⁄2 teaspoon rosemary
- salt, to taste
- pepper, to taste
Directions
- Cut potatoes in 1 inch pieces.
- Whisk remainder of ingredients together in large bowl. Add potatoes and toss.
- Roast in greased pan at 375 F for 40-45 mins, turning occasionally.
