Dijon Mustard Salad Dressing

This a wonderful recipe taken from Jean Carnahan's Recipes from the Governer's Mansion. My friends beg me to make it whenever they come over for dinner. You won't be disappointed.

• Yields: 1 1/4 cups

Ingredients

• 4  tablespoons Dijon mustard
• 3  tablespoons red wine vinegar
• 1  tablespoon white wine vinegar
• 1⁄4 teaspoon salt
• 1 -2  garlic clove, minced
• 1⁄2 teaspoon basil
• 1⁄8 teaspoon black pepper
• 2  drops  hot sauce
• 12  tablespoons  oil

Directions

1. Combine mustard and vinegar. Add remaining ingredients except oil. Mix until well blended. Add oil and incorporate one tablespoon at a time. Chill. Keeps several weeks. Use on salad greens.
