Dijon Honey Mustard Roasted Potatoes

I got bored with the stock-in-trade baked or mashed potatoes and decided to experiment and came up with this. I think this might also work as a cold potato salad. Show more

Ingredients

  • 6  medium  red potatoes, chopped into bite-size pieces
  • 1  clove garlic, peeled and minced fine
  • 14 cup Dijon mustard
  • 3  tablespoons honey

Directions

  1. Place potatoes in a bowl.
  2. Mix the garlic, mustard, and honey together and pour over potatoes and stir to coat Put into a shallow baking dish and bake at 400 F until fork tender (about 15 minutes).
