Ingredients
- 1⁄2 cup boiling water
- 1 (2 g) package gelatin
- 2⁄3 cup cottage cheese
- 1⁄4 cup evaporated skim milk
- 1 (2 g) package artificial sweetener
- 2 tablespoons lemon juice
- 1⁄2 cup crushed pineapple
TOPPING
- 1 slice bread
- 1 (2 g) package artificial sweetener
- 1⁄2 teaspoon coconut extract
Directions
- Mix water and gelatin in blender.
- Add cottage cheese, milk, sweetener and lemon juice. Blend til smooth.
- Add crushed pineapple.
- Blend.
- Pour into 8 inch pan.
- TOPPING:
- Mix all ingredients in blender.
- Sprinkle over filling and refrigerate 24 hours.
