Devilled Chicken

Ingredients
- 8 chicken thighs
- 2 tablespoons sugar
- 1 tablespoon ground ginger
- 1 tablespoon English mustard powder
- 1 tablespoon curry powder
- 2 ounces butter
- 2⁄3 cup tomato ketchup
- 1 tablespoon curry sauce
- 2 tablespoons soy sauce
Directions
- Place the chicken portions on a board.
- Mix the sugar, ginger, mustard and curry powder together.
- Rub well into the surface of the chicken. Leave for 2 hours.
- Arrange the chicken on a grid in 2 roasting pans.
- Melt the butter and brush all over the chicken.
- Bake in a preheated moderately hot oven, 400°F for 30 minutes, until golden brown.
- Mix the ketchup and sauces together and brush over the chicken portions.
- Return to the oven for 10 minutes.
- Arrange on a warmed serving dish and serve immediately.
