Dessert Lokshen Kugel

Ingredients
- 1⁄8 lb butter (1/2 stick)
- 1⁄3 cup sugar
- 3 eggs, separated
- 1 dash salt
- 1⁄8 teaspoon cinnamon
- 1⁄2 teaspoon vanilla extract
- 1⁄2 teaspoon lemon juice
- 1 lb cottage cheese or 1 lb pot cheese
- 8 ounces wide egg noodles, cooked and cooled in ice water
- 1⁄2 cup golden raisin
Directions
- Preheat oven to 350°F.
- Cream butter and sugar together with hand mixer or stand mixer. Add egg yolks, salt, cinnamon, vanilla, lemon juice and cottage cheese. Blend well.
- Stir in well-drained noodles and raisins.
- Beat egg whites to stiff peaks. Fold into noodle mixture.
- Pour into buttered baking dish. Bake 45 minute Serve warm.
