Desert Sour Cream Potatoes

Ingredients
- 4 russet potatoes, peeled or 4 russet potatoes, left with skins on for a more rustic look
- 4 tablespoons butter, melted
- 1⁄2 cup grated cheddar cheese
- 1⁄2 cup monterey jack cheese
- 2 tablespoons grated onions
- 1 cup sour cream
- salt
Directions
- Parboil potatoes until a fork can pierce through the potato easily.
- Let cool to touch.
- Preheat oven to 350°F.
- Grate potatoes and then add remaining ingredients and mix.
- Transfer mixture into an ungreased casserole and bake until completely hot about 45 minutes, depending on the size of the casserole dish.
