Delicious Zucchini Bread With Superb Lemon Butter

Ingredients
- 3 eggs
- 1 tablespoon lemon, zest of
- 1 cup oil
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking soda
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 2 cups shredded zucchini
- 1 teaspoon salt
- 1 teaspoon cinnamon
Honey lemon Butter
- 4 ounces softened butter
- 1 tablespoon honey
- 1 tablespoon lemon, zest of
Directions
- Preheat oven to 350°F.
- In a large bowl beat together eggs, oil, sugar, and vanilla.
- Slowly add zucchini.
- Add lemon zest and mix thoroughly.
- In a separate large bowl combine flour, baking soda, baking powder, salt, and cinnamon.
- Slowly and zucchini mixture until completely combined.
- Divide batter into two greased loaf pans. Bake for 1 hour and 15 minutes or until toothpick comes out clean.
- Serve very warm, so that when you put on lemon honey butter it melts.
