Delicious Turkey (Meat) Loaf

Ingredients
- 1 medium onion, chopped
- 2 teaspoons garlic, minced
- 2 tablespoons olive oil
- 2 lbs lean ground turkey
- 1 large egg
- 2 teaspoons Worcestershire sauce
- 1⁄2 cup ketchup, divided
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 1⁄4 teaspoon chili pepper
- 5 teaspoons dried parsley
- 1⁄4 teaspoon cumin
- 1 (6 ounce) can tomato paste
- 12 saltine crackers, crushed
- 20 vegetable crackers, crushed (I used Kraft Vegetable thins)
Directions
- Preheat the oven to 400 degrees F.
- In a medium sized skillet, warm the oil and add in the garlic and onions. Saute until the onions appear clear. Set aside.
- In a large bowl combine the remaining ingredients, setting aside one of the 1/4 cups of ketchup. Mix just until well combined. Add in the sauteed onions and garlic. Mix.
- Transfer the mixture to a loaf pan and brush the top with the remaining ketchup.
- Bake for about 50 - 55 minutes or until an instant-read thermometer registers 160 degrees.F.
- Remove from the oven and let rest for 10 to15 minutes before slicing.
