Ingredients
- 2 1⁄2 cups salad greens
- 1⁄4 bell pepper
- 1⁄4 cucumber
- 1⁄4 tomatoes
- 1⁄4 yellow squash
- 1⁄4 zucchini
- 10 water chestnuts
- 2 ounces tofu
- 1 ounce dried blueberries
- 5 mushrooms
- 1 ounce red onion
Directions
- Chop or slice veggies, mix everything together, add or subtract any other veggies you'd like, keep the tofu or sub with any other protein, good with feta cheese!
- Use whatever dressing you'd like.
- Easily doubled, tripled.
