Delicate Almond (Or Vanilla) Cookies

These are simple and fast, yet soft and delicate cookies. Perfect to serve with afternoon coffee or tea. They orginally call for vanilla extract, but I like to make them with Almond extract. I also easily substitute soy milk for the cream. Show more

Directions

  1. Preheat oven to 400 degrees.
  2. Cream butter and sugar thoroughly.
  3. Add beaten eggs, cream and extract.
  4. Sift dry ingredients and add to cream mixture, mixing well.
  5. Roll dough into 1 inch balls and place on ungreased cookie sheet.
  6. Bake 10 minutes.
