Ingredients
- 14 lbs cooked turkey breast
- 1 (46 ounce) can chicken broth
- 1 tablespoon pepper
- 50 buns
- 50 slices tomatoes
- 50 lettuce leaves
- 1 tablespoon mayonnaise (per each bun)
Directions
- Slice turkey into 3 oz. portions.
- Place in steamtable pans, in juice then place on ice during meal service.
- Assemble sandwiches. 3 oz. turkey, 1 lettuce leaf, 1 slice tomato, 1 bun.
- VARIATIONS: USE ANY COMBINATION OF COLD MEATS.
