Deep-fried Wonton Cookies

This unique cookie recipe is from a 1990 Betty Crocker booklet. It only makes 2 dozen, but they'd be very different on a Christmas goodies tray. Show more

Yields: 24 cookies

Ingredients

  • 1 12 cups  chopped prunes, , or substitute chopped dried apples
  • 1  cup  chopped  dried apricot
  • 1 12 cups  packed brown sugar
  • 1 12 cups flaked coconut
  • 1  cup  chopped  almonds
  • 24  wonton skins
  •  vegetable oil (for frying)

Directions

  1. Mix prunes, apricots, brown sugar, coconut and almonds together to make filling.
  2. Place about 2 tsp filling on centre of each wonton skin; moisten edges with water.
  3. Fold each skin in half to form a triangle; press edges firmly to seal.
  4. Cover to prevent drying.
  5. Heat oil (1 to 1-1/2 inches) to 360F degrees.
  6. Fry 3 to 4 wontons at a time, about 1 minute on each side, turning occasionally, until golden brown; drain.
