Deep Dish Cookie... With Beans!

Ingredients
- 2 (15 ounce) cans garbanzo beans, drain and rinse
- 1 cup quick oats
- 1⁄2 cup applesauce
- 3 tablespoons coconut oil
- 2 teaspoons vanilla
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 1⁄4 cups sugar
- 1 cup chocolate chips
Directions
- Combine everything besides chocolate chips Ina large food processor until smooth, scape sides as needed. Stir in chocolate chips and bake in a greased 10 inch springform pan at 350 for 35-40 mixtures. Cool 15 minutes at least before serving.
- Mini chips work, can sub white beans for garbanzos. I use coconut sugar with good results. Can make sugar free with using 2 cups of soft, pitted dates.
