Decadent Vegan Chocolate Mousse

Ingredients
- 1⁄4 cup dates, pitted and soaked
- 1⁄4 cup water
- 2 tablespoons water
- 2 tablespoons maple syrup
- 1⁄2 teaspoon vanilla extract
- 1 1⁄4 avocados, chopped (should make 3/4 cup)
- 6 tablespoons unsweetened cocoa
Directions
- Blend the 1/4 cup water, dates, maple syrup, and vanilla until smooth.
- Add avocado and coca and blend until creamy.
- Add the remaining water and process for another 30 seconds or so.
- Serve chilled.
- Should keep for several days in the refrigerator.
