Decadent Roasted Blue-Chees Potatoes

Yields: 4-6 

Ingredients

  • 1 12 lbs  red potatoes, cut into wedges
  • 1  tablespoon olive oil
  • 18 teaspoon salt
  • 18 teaspoon black pepper
  • 8  ounces bacon, cooked until crisp & crumbled
  • 1  cup  sharp cedder cheese, shredded
  • 13 cup  blue cheese, crumbled
  •  sliced scallion, including the tender green tops (garnish)

Directions

  1. preheat oven to 400 degrees farenhight.lightly butter a 13 bu 9-inch baking dish.
  2. add potato wedges,ooil,salt & peppr and toss to coat.spread evenly in the prepared dish.
  3. bake for 30 minutes or until the potatoes are tender when pierced with the point of a sharp knife.
  4. meanwhile, in a medium bowl, toss together the bacon & the cheeses. sprinkle over the potatoes & bake for 5-10 minutes longer or until the cheese are melted and lightly golden.
  5. sprinkle with sliced scallions.
  6. serve warm.
