DDP's Harvest Salad

Serves: 4-6
Ingredients
- 8 cups fresh greens
- 1⁄4 cup raw pumpkin seeds
- 1⁄4 cup almonds
- 1⁄4 cup fresh cranberries
- 1⁄4 cup goat cheese
- 1⁄4 red onion, diced
- 1⁄2 cucumber, diced
- 4 white mushrooms, diced
- 1 avocado, diced
- 1 tablespoon dry chia seeds
- 2⁄3 cup balsamic vinegar (cranberry pear)
- 1⁄3 cup olive oil
- 1 teaspoon sea salt
- 1 teaspoon black pepper
Directions
- Add all the salad items except for the chia seeds, vinegar, and olive oil in a bowl. Mix together.
- Add the vinegar and olive oil to separate bowl, stir until mixed together, apply to salad.
- Sprinkle on chia seeds.
