Date, Cocoa and Coconut Truffles

Yields: 20 truffles
Ingredients
- 30 dates (fresh)
- 4 tablespoons cocoa
- 4 tablespoons coconut oil
- 1 tablespoon rum
- 1⁄2 teaspoon vanilla
- 8 teaspoons desiccated coconut
Directions
- Process all except dessicated coconut in food processor until smooth.
- Scoop out teaspoon sized balls and roll in dessicated coconut.
- Cool in fridge for 30 mins to firm.
- YUM!
